Food Guide: the Flavours of Muggia

The cuisine of Muggia is the perfect meeting of sea, Carso and Istria: a border land where the seafaring tradition of the Adriatic blends with the rich, Central-European flavours of the hinterland.

Seafood cuisine

The catch of the Adriatic takes centre stage: scampi alla busara (langoustines in tomato sauce), squid, mussels, clams, grilled fish and seafood risottos, prepared according to the local seafaring tradition. There is no shortage of specialities such as creamed cod (baccalà mantecato), sardines in savor and the famous fish brodetto (stew), an authentic expression of Upper Adriatic cooking.

Land and Carso cuisine

The land cuisine tells the Karst and Central-European soul of the area, with Carso ham, artisan cured meats, local cheeses, bread gnocchi, game and the traditional piatto di caldaia, a typical Muggia speciality of boiled meats and sausages, to be enjoyed in the town’s historic trattorias. Everything is paired with the wines of Carso and Istria and with the prized extra virgin olive oil produced on the hills surrounding Muggia.

Our recommendations on arrival

On arrival you will find a list of our recommendations, complete with phone numbers and useful information to easily book your table.

Local specialities

Native wines, PDO extra virgin olive oil and the traditional osmize: the products that tell the bond between Muggia, the Carso and Istria.

Wine

The area is renowned for its native wines: the mineral Vitovska, the elegant Istrian Malvasia, the distinctive Terrano and the Refosco, perfect to pair with fish dishes, Carso cured meats and local cheeses.

Olive oil

The extra virgin olive oil of Muggia is one of the area’s most precious specialities. Between the Adriatic Sea and the Carso hills, the olive trees grow in a unique microclimate shaped by the Bora wind. This gives rise to the prized Tergeste PDO, made from the native Bianchera variety, with its bold character and pleasant balance of bitter and spicy notes.

Osmize

The osmize are one of the most authentic traditions of the Trieste Carso. For certain periods of the year, the farms open their own cellars and offer visitors their home-made products directly: Carso wines, cured meats, cheeses, eggs, pickles and homemade desserts. A simple, genuine experience, immersed in nature.
